Chickie’s Favourite Banana Bread

Banana Bread 

This mild banana bread has always been one of chickie’s favourites, and a great recipe for kid’s to help with.


What you will need:
1 1/2 cups all purpose flour
3 tsp baking powder
1/2 tsp salt
1/3 cup butter
1/3 cup white sugar
1/3 cup brown sugar
2 eggs, well beaten
1 cup mashed very ripe banana

Preheat oven to 350.

Mix flour, baking powder and salt together.
In another bowl mix sugars and butter together until smooth.
Add eggs and mix well.
Add dry ingredients to the butter and egg mixture, alternating with the mashed banana.
Start and end with the flour.
Pour batter into greased loaf pan and bake for at least 1 hour.

When done, leave in cool in pan for 10 minutes, then turn loaf out onto cooling rack.

This banana bread freezes very well.
